With the New Year comes…

Lots of other new things!

For starters, I got an iphone!  It’s about stinkin time! I was still rockin’ a nokia somethin-or-other. It looked something like this

It didn’t even have internet on it.

…it was time, it was time.

Also new,

my attitude! I know that sounds dumb but went the clock struck midnight on New Years Day, a whole new me came out. Look out world! I’m ready to take on anything!

Last thing to hit the new list

you’ll just have to wait around until later today to find out. But it’s new and it’s BIG! Any guesses??

I’m back!!!

Soo uhhh…no excuses for taking a 2 month break from blogging. With the new year comes new goals and blogging is definitely on my list.

But first, I’ve got a new hair cut!

Okay, so really I cut my hair like a month ago but it’s new to all of you. Some days I like it, others I don’t. Oh well.

Back to 2011…

In the past, a new calender year never really meant much to me.  Perhaps it comes with age or maybe life experiences, but the prospect of what 2011 holds makes me giddy! I’m all about making it a good year.

2010 was a heck of a year.  I was sick all year, ended a 2.5 year long relationship with my ex and lost my identity in Christ. Looking back on it, I really think it sucked. All I can say is I’ve learned quit a few life lessons. What doesn’t kill you only makes you stronger.

I’m ready to focus on things that are important to me, rejoice in my blessings and set a few goals to make 2011 awesome!!!

2011 Goals:

1. Spend daily time with the Lord.

2. Continue my journey to good health!

3. Become a nutrition and wellness consultant and pre/post natal exercise specialist.

4. Be a better blogger

5. Join a women’s small group

6. Go out during the week! I’m 22 not 82!

7. Get my own place

So cheers to a new year.

May it be filled with new opportunities, endless amounts of blessings and surprises!! Can’t wait!

Homemade Chocolate Candies

Today was the perfect Sunday!

It was spent drinking coffee with my sister and her husband, making homemade chocolate candies and seeing Unstoppable with friends and family. Not to mention, getting a few chores done. A very good Sunday indeed!

On my mind when I woke up this morning: coconut bonbons, (homemade cinnamon pecan butter) pecan butter cups and sea salted caramel chocolates.

After picking up a few ingredients, I came home focused. It was me, the kitchen, my chocolate and When Harry Met Sally playing on my computer. Alone. Ready to conquer.

And conquer I did.

Now, I’m left with an upset stomach from all the “taste testing” I did. wink wink. It was worth it!

Roll it, dip it, eat it!

Here’s a simple, light meal to mix up the usual salad.

Ingredients:

  • Romaine leaves
  • Carrots
  • Cucumber
  • Green bell pepper
  • Zucchini squash
  • Sprouts
  • Hummus (eggplant hummus for me! )

Dipping Sauce:

  • Braggs Liquid Amino Acids – (for us gluten-free chicks or just soy sauce)
  • Good squeeze of Sriracha(or a really good squeeze if you’re like me and like it hot!)
  • Fresh grated ginger

Assembly:

  • Clean your romaine leaves
  • Cut your veggies into sticks – roughly uniform in size and shape
  • Spread hummus on the center of each leaf
  • Add veggie medley
  • Top with bundle of sprouts
  • Roll that sucker up!

Now the fun part!

You rolled it,

you gotta dip it,

then you gotta eat it!

Then….

just when you thought it couldn’t get better, you pull out the jar of almond butter…

Oh yes I did! Pure deliciousness plus a good source of added protein to keep you fuller longer.

On the side, I assembled a mini-salad of some leftover veggie sticks plus a couple button mushrooms.

Finger food at it’s best 🙂

Smoothie Love

I just can’t help myself!

It could be negative 20 degrees outsides and I will still be craving a cold, silky smoothie. And I will a make a smoothie, and eat a smoothie even when the temperatures do hit negative 20.

….it’s not likely to get that cold here in Nashville Thank you Jesus! – I’m a Chicago born girl. Cold weather and I are no longer friends

Like I’ve mentioned before, I always start with a green – either kale or spinach.

Why you ask?

These bad boys are packed with Vitamin K, Vitamin C, beta carotene, Vitamin A and iron(!!!) Hello immune buster!

In short, they keep your body strong and able to fight off illness like the common cold. They’re even proven to help fight cancer.

Back to smoothie making

I pack my blender with 4 cups of greens, usually add a couple slices of zucchini squash because I think it helps make my smoothie extra smooooth. I also put in whatever super powders I’m feeling for the day (more on that later).  Next up, some form of liquid. I usually just use water. Toss in a couple of ice cups for good measure and blend away! I like to blend my greens up first to really break them down. Trust me, a chunky green smoothie will not be appealing to anyone!

After my greens have been pulverized, I add in my fruit! Lately that’s been pears, cantaloupe or honeydew!

Get creative! In today’s morning smoothie, I added fresh mint! YUMMmm.

Once my smoothie is well blended, I pour it into a bowl (usually) and top it with any of the following:

  • Honey
  • Almond Butteror nut butter of choice
  • Coconut Butter
  • Cereal
  • Granola
  • Nuts
  • Dried Fruit

Consume. With a spoon. In your bed. Under many layers of covers. With a cup of coffee.

You just can’t go wrong my friends. Start adding a green smoothie to your weekly routine and I promise you’ll start noticing an extreme energy boost!

Bursting at the Seams!

That’s how I feel! Like I’m just about to BURST!

So far, my posts have been about my eats and a little bit about my life. As much as I want those things to be a part of this blog, I created Happy Food Happy Body to go beyond that. I imagine it being an outlet to share with you my ongoing passion to learn everything there is to know about obtaining optimal health holistically.

THE PLAN

To share the inside scoop on topics such as protein, amino acids, fats, raw food enzymes and carbohydrates to name a few.

I also want to touch on topics like…

  1. The connection between a positive train of thought and a fulfilling life
  2. Why yoyo diets are just that – a yoyo of extreme highs and extreme lows
  3. The not-so-obvious benefits you’ll see in your life through taking control of your health

Truth is, I’m too dang excited to talk about everything I just don’t know where to start! What’s a girl to do?

Let’s start with the refreshing our outlook

Fact: (Dwight…from The Office…anyone?)anyways…

Fact: Putting your health first does not mean putting every thing else second!

It means, swapping out a few ingredients in the fridge or waking up a 10 minutes earlier to clear your head and enjoy …whatever it is that makes you happy!

Little changes add up over time.

Little changes stick.

There’s no quick fix my friends. And I mean that in regards to weight, self-esteem, attitude, your job, your family, your _________ (you fill in the blank).

So here’s my refreshed outlook…

The Old Outlook –

Work has been a pain in my booty this week. I blame it on the early morning meeting we had on Tuesday.

The Lie –

Work has not been bad because of the meeting. It’s been bad because of my attitude.

The New Outlook – Work today and Friday will be wonderful because every day I am blessed to have a job and I am blessed to work with a team of people I sincerely can’t say a bad thing about!
